Tunisia Live’s Ramadan Feast Recipe #7: Chakchouka

Spending hours and hours in the kitchen during Ramadan is not an easy task. As days are getting warmer and the heat is becoming unbearable, staying in front of the stove even for 30 minutes can be real torture.

That is why, today, we suggest to you a delicious recipe that is quite easy to prepare, won’t need many ingredients and won’t take you more than 30 minutes. The key ingredients are tomatoes, onions and eggs.

Chakchouka is a very common dish in Tunisia, as it combines ease with taste. It can come in different versions. You may want to add ingredients like merguez, which is a red spicy sausage or kadid, which is a kind of dried meat.

Ingredients (for 4 persons):

- 6 fresh tomatoes
- 4 chilli peppers
- 4 cloves of garlic
- 2 tablespoons of tomato paste
- 8 merguez sausages
- 6 potatoes
- A drizzle of olive oil
- 1 tablespoon of caraway
- 4 eggs
- salt and pepper

Preparation:

First, cut all ingredients (except the eggs) into pieces. Put the drizzle of olive oil in a pan, then add vegetables, sliced sausages, peeled garlic cloves, caraway, a pinch of salt and pepper.

Dissolve the tomato paste in 500 ml of water then add it to the content of the pan.

Bake for about 20 minutes (until potatoes become tender). During the last minutes of cooking, poach eggs in the sauce. Serve as soon as the eggs are cooked.

That’s it! Our savory Chakchouka is ready (and with some bread on the side this is a truly delicious meal).
